Stove Top Spinach Balls

Do not fret because of evildoers, nor be envious of the workers of iniquity.
For they shall soon be cut down like the grass, and wither as the green herb.
Trust in the Lord, and do good; dwell in the land, and feed on His faithfulness.
Delight yourself also in the Lord, and He shall give you the desires of your heart.
Commit your way to the Lord, trust also in Him, and He shall bring it to pass.
He shall bring forth your righteousness as the light, and your justice as the noonday.
Rest in the Lord, and wait patiently for Him; do not fret because of him who prospers in his way,
Because of the man who brings wicked schemes to pass. Cease from anger, and forsake wrath;
Do not fret—it only causes harm.  Psalm 37:1-8

There are several things in this passage for you to do, or not to  and then there is the result of what God will do. God truly knows what is best for our well being and this passage is just full of some of those things.  What a challenge it is to me on a daily basis to not fret, to trust in Him with all my heart and not to lean on my own understanding, to delight myself in Him, to commit my ways unto Him,  to rest in Him and to wait patiently for Him.  I want to do each of these things, because I believe His Word is true and it will benefit my life as I obey and it will honor Him.

Today I would like to share a recipe I found at the  Kraft website.  It is for Stove Top Spinach Balls.  It  sounded so good, so I printed out  and made it. My husband and I both enjoy dressing and spinach, but we had never eaten them together in a recipe.  These spinach balls are delicious and I have made them several times. Last evening, I made some and took them to our Ladies Meeting at church and they were a big hit.  Some of the ladies ask if they could take some home with them.  I was delighted that others were enjoying them, as well.

This recipe is really simple to make. You can make them ahead and freeze in a plastic freezer bag for up to three months according to the recipe.  It is so nice to have them on hand when you need something right away.   You can use them as an appetizer or you can just eat them as a snack. If you would like to try them for yourself, here is a list of ingredients you will need on hand.

Frozen Spinach
Stove Top Dressing
Canned or Fresh Mushrooms
Parmesan Cheese
Butter or Margarine

If you would like to print out this recipe for the Stove Top Spinach Balls please click here.

Here is the steps I took:
 1.  Thaw the spinach and drain it well.

2.  Beat the eggs and add to the bowl with the spinach.

3.  Add the Stove Top dressing to the above ingredients.

4.  Cut up the mushrooms and add them to the mixture

5.  Add melted butter, Parmesan cheese, water and mix well.

6.  Make into balls, the size of a golf ball, and place on a baking sheet that has been sprayed with cooking spray.

7.   Bake at 365 degrees for approximately 15-20 minutes or until lightly brown. (My oven is hotter than what the temperature is set at.  (The recipe calls for 400 degrees.)  Check it out here.

8.  Let cool slightly before removing from baking sheet, if you are planning to serve them warm.

When I make these, I usually freeze what is left over. Let the cool completely if you are planning to freeze them.   Put in a plastic container or a freezer bag to freeze.

When I have unexpected company, I can just pull them out of the freezer, put them on a baking sheet and heat them in the oven for 10-15 minutes at 400 degrees.

They make great snacks as well.  I just take them out of the freezer and pop them in the microwave .

The spinach is healthy for you with all the nutrition that is in it.  We use spinach in many recipes  such as salads, vegetable lasagna, smoothies with fruit and use it as a side dish.    Hope you will try these Stove Top Spinach Balls, they are yummy.
