Recipe Post:
I am really working on eating healthier for my bodies sake. Approximately three years ago I was diagnosed with Polymalgia Rheumatica and within the last year I have been diagnosed with Rheumatoid Arthritis, as well. I have heard that these two diseases, pretty much, go together. At the time I was diagnosed with Polymalgia Rheumatica, I was walking approximately four miles a day and exercising. This disease came upon me very suddenly. In only a few weeks, I got to the place that I could hardly walk. Living on medication for the last three years, I decided to eliminate any thing with artificial sweeteners from my life, and almost all sugar. I do believe it has helped greatly. My primary care doctor will be pleased to see I have lost sixteen pounds, in the last three months. I have been eating more fresh fruits and vegetables and I feel so much better. I have been told that avocados are very good for you, so when I saw this recipe for a Guacamole dip and raw vegetable at Cooks.com. , I decided to try it. I have adapted it to my taste. I really liked it, so I thought I would share it with you.
What you will need:
2 avocados
2 Tablespoons of lemon juice
2 Tablespoons of chopped green onion
1 teaspoon of salt.
1-2 teaspoons honey
1/4 teaspoon of pepper
1/2 teaspoon of hot pepper sauce (adjust to your taste)
(You can use any vegetables but the following is what I used.)
1 bag of baby carrots
1 red pepper
1 yellow or green pepper
1 seedless cucumber
Cut avocado in half and remove the seed. Remove the pulp from the avocado as seen here.
Mix first 7 ingredients in blender and blend on medium speed until smooth.
(If needed stop blender and scrape sides of blender.)
Put in small serving bowl and refrigerate until ready to serve.
Rinse baby carrots.
Cut cucumber in slices as seen below.
Wash and slice peppers in strips.
Place vegetables on serving tray.
Enjoy!
You can rejoice in eating healthy. I know I am. I feel so much better.

DeleteJo Ann thanks so much for sharing this recipe. We love guacamole and I would love to find a healthy sub for ranch veggie dip. I have my own home made Ranch which is much better than store bought but it is nice to have something different. My mom also has RA and I know how important it is to remove the junk from your diet in order to feel better. I'm sorry for your struggle I know it is a hard one.
