Tator Taco Cakes

Recipe Post:
I had some left over mashed potatoes so I decided to try something different.  Using ingredients I sometimes use when making a Mexican dinner, I made these Tator Taco Cakes.  My husband really liked them, so I thought maybe you would as well. The recipe is as follows:

Ingredients:
1 can of re-fried beans
3 cups of mashed potatoes
3/4 cup of flour
2 eggs beaten
3 teaspoons of taco seasoning
1 can of green chilies (drained)
1 1/2 cups of cheddar cheese

Put mashed potatoes, re-fried beans and 3/4 cup of flour  in mixing bowl and mix until smooth.  


Add two beaten eggs.  


Add 3 teaspoons of taco seasoning.


Add one can of green chilies that the liquid has been drained off.


Add 1 1/2 cups of cheddar cheese


Mix all ingredients in mixer until well blended. 

Spray skillet with cooking spray.


Use a 1/4 measuring cup to measure batter for your cakes.
(I spray the measuring cup with cooking spray so the batter will come out of the cup easily)


Flatten cakes with spatula.


Turn when brown on one side.  Cook until both sides are browned well.  


Transfer to serving platter.


My husband likes to eat the Tator Taco Cakes with just a pad of butter.



I like to sprinkle more cheese on the cake and top with a jalapeno pepper, sour cream and Black Bean Salsa on a leaf of lettuce.



So yummy, it is like having a taco without the shell.

If you are looking for a way to use up those left over mashed potatoes, this recipe could certainly be your best choice.  Hope you will give them a try.
