I really love pizza and tacos of any kind. But I don't like all the calories or fat. I cut down on the fat and calories by making my own taco meat from chicken breast. (see how here), The chicken breast is lean, it is 97% fat free. I use it in place of ground beef in all the recipe I make that call for it.
Here is how I make my taco meat using the following:
1 1/2 cups taco seasoning
1/2 cup of water
Fry in a skillet until done approximately
I make it in bulk and freeze it in one pound packages of taco meat.
To make the three Tortilla Taco Pizza I use the following:
1 pound of taco meat
1 can of re fried beans
8 ounces of Adams Reserve Cheese shredded ( you could use cheddar cheese shreds)
3 wheat tortilla pads
(adapt to the number of servings needed)
Spread re fried beans on tortilla pad then top with taco meat and cheese.
Bake in oven until cheese is melted and crust is browned. Remove from oven.
Eat as Pizza without toppings straight from the oven.
Slice and eat as pizza or add the following toppings: chopped onions, tomatoes, lettuce, sour cream and taco sauce.
My husband likes his with Italian dressing and taco sauce with sliced tomatoes.
This is a complete meal. Sooo Good. yet healthy with out all the fat or calories.
No matter how you eat it, it is a real treat.
