Slushy Strawberry Punch

Beverage Post:
I made this slushy Strawberry Punch for my youngest daughter's wedding and it was a big hit with all the guest both young and old.  I make it on a regular bases for my family on special occasions. We all enjoy slushy, especially in hot weather. It is so refreshing and thirst quenching. All of my grandchildren look forward to the times when I make it.  I try to have some on hand when they come for a visit.  If you like slushy perhaps you would like this recipe.  It is so nice to have it on hand when company comes or to enjoy alone on these hot summer days..  

Here is what you will need to make it:
13 cups of boiling water
4 packs of Strawberry Jello
4 cups of sugar
1 12 ounce can of frozen lemonade
2  large cans of pineapple juice

Bring water to a boil and add the Strawberry Jello, sugar and blend until dissolved.
Then add the 2 cans of pineapple juice and 1 can of frozen lemonade.  Mix well.  Let cool and then put in the freezer and let it freeze.  When it starts freezing, stir it several time until it is completely  frozen.  By stirring it you are keeping it from freezing as a block but making it like slushy.  It will take approximately thirty six hours for it to freeze thoroughly.  

When the mixture has frozen to slushy consistency.  You can put a cup or so in your favorite glass and eat it with a spoon  as seen below.


Or you can add ginger ale to the slushy and make a glass of punch.  





If you are serving a group of people, you can serve it in a punch bowl by measuring out four cups of slushy and adding a 2 liter bottle of ginger ale or 7 up.  Your guest will be delighted with it.

It is o refreshing on these hot summer days or anytime.

Creamy Frozen Salad

Count it all joy, my brothers, when you meet trials of various kinds, for you know that the testing of your faith produces steadfastness. And let steadfastness have its full effect, that you may be perfect and complete, lacking in nothing.

If any of you lacks wisdom, let him ask God, who gives generously to all without reproach, and it will be given him.  But let him ask in faith, with no doubting, for the one who doubts is like a wave of the sea that is driven and tossed by the wind.  For that person must not suppose that he will receive anything from the Lord; he is a double-minded man,unstable in all his ways.

Food Post: A girlfriend  gave me this recipe many years ago. It  is still one of my favorite salads and snacks as the temperatures climb, as they have this past week.  It is so refreshing and simple to make.
The following is what you will need to make it:



Ingredients
2 cups of Sour Cream
1 cup of sugar
1/8 teaspoon of salt
1 banana
1 can of crushed pineapple
2 Tablespoons of lemon juice
1 cup of nuts (walnuts or pecans chopped)
1 jar of maraschino cherries
1 jar of green cherries

Mix 2 cups of sour cream, 1 cup of sugar and 2 Tablespoons of lemon juice in mixing bowl.


Mix well.


Next
Drain the juice from the Crushed Pineapple.


Cut up the jars of cherries,  reserving 9 green and 9 red cherries as garnish.


Cut up the banana  into bite size pieces.


Mix the Crushed Pineapple, cherries, banana and chopped nuts (optional) into the sour cream mixture.  Blend well.  


Put paper liners in your muffin pans.


The mixture makes approximately 18 muffin cups of creamy Frozen Salad.


Using your 1/3 cup measuring cup.  Fill each tin with mixture.






Top with green and red cherries (regular or stemmed)



When they are frozen and you are ready to serve.  Remove the paper and serve on a leaf of lettuce and garnish with the twig of mint. (Let it soften about 5 minutes before eating when removed from freezer.)

or eat them as a snack. Just pull the paper down and start eating anytime.  


Yummy!!!

You will be glad you did.  They are so refreshing with a taste of fruit, sour cream and nuts.

Fried Apples

 Food Post:
We have a couple of apple trees that do not produce many apples, but we are thankful for the ones we get from this tree.


These were picked from the tree above.


I remember my mother making Fried Apples.  
They were so good on fresh baked biscuits, smothered in fresh churned butter.  

Today was my day to do like wise. 

She would wash the apples and remove the core but leave the peel on.  She would then  slice the apple into quarters,if they were small.  The larger apples she would slice into eights. She would put them in water with a tablespoon of lemon juice to keep them from turning brown.   


She would melt a stick of butter in the skillet and then add the drained apples.


She would fry them until they were tender. Turning the apples with a spatula several times while they are cooking to keep them from burning.


Adding brown sugar to taste.  (For this size of electric skillet, I added two cups of brown sugar, and one cup of butter)


When they are soft they are ready to serve.  

I served these with just a touch of cinnamon sprinkled on top,


These are so good served with fresh baked bread from your own oven smothered with butter.  YUM!



Gotta love the fruit from your own trees.
