Tasty Baked Potatoes

Recipe Post:  If you would like baked potatoes that you can eat the skins, then this is the way to fix them.  The skin is soft and tasty.

Wash the potatoes thoroughly with a vegetable brush. and dry with paper towels.

Put some oil in a bowl that is large enough to roll the potato in to coat with oil. 

                                            Coat potatoes with oil. 

Place potatoes in a pan to sprinkle with Kosher or sea salt.

Once you have the potatoes oiled and salted, pierce the potatoes with a paring knife 8-12 times each.  

Preheat oven to 350 degrees.

Place potatoes on the oven shelf and place a pan on the rack underneath to catch any drippings.  
(There will be only a small amount.)

Bake 1 hour when baking  4 potatoes.  I baked these five  potatoes for 1 hour and 15 minutes.  

Remove from oven and cool slightly.  Split in half and squeeze potato slightly for the inside of the potato to pull away from the side and make it look fluffy.  Add whatever topping you would like.  I like sour cream, butter and bacon bits.  My husband likes salsa on his.  

I served the potatoes with corn on the cob, broccoli  and strip steak, grilled on the grill.  
What can I say?  It was absolutely delicious.
