Pasta E Fagioli Soup

Recipe Post: I saw this recipe on the back of the package of the beans, so I thought I would give it a try.  It is certainly the time of year to be eating soup.  Here in WV we have had 2 snow storms in one week that has brought us  about 30 inches of snow.  It looks like a beautiful wonderland but it is also a nice time to spend in doors.  
I have changed this recipe a little to our taste but over all it is a good recipe to make.  

1 package of Ultima Pasta E Fagioli
1 1/2 cups of  chopped celery
1 1/2 cups of  chopped onions
1 1/2 cups of chopped carrots
3 teaspoons of minced garlic
3 cups of water
28 ounces of beef broth
1 can of Diced Tomatoes with chilies
1 teaspoon of kosher salt
Garnish with fresh Parmesan cheese

Chop the celery, onions, and carrots finely.  I use the chopper below to simplify the job.

Saute vegetables until tender in the broth.  Then add the following: 3 teaspoons of minced garlic,
3 cups of water, 1 can of Diced Tomatoes with chilies, 1 teaspoon of kosher salt, 1 package of Ultima Pasta E Fagioli, Cover and simmer for 3 hours.  

Serve with Garlic bread.

Garnish with Parmesan Cheese.
